Harvesting is always a vital stage for the winegrower. The year of hard work in the vineyard comes to an end. But the end is also the beginning of the cellar work. Pressing the grapes, settling the must, maceration, starting the fermentation process, tasting the fermenting must, cooling the white wines or heating the red wines all become almost daily tasks, with long days ahead of them.
Yes, I’m satisfied with the 2020 harvest. Admittedly lower in quantity than the ten-year average, but man made no mistakes, nature decided to do it that way. The rain at the beginning of June, during the flowering period, was not ideal.
As far as the quality of the must is concerned, I gave priority to acidity. Not necessarily a lot of sugar, more than the minimum required by the Vully AOC regulations, but just enough to keep the wine balanced.
Will the 2020 wine be any good? I taste them 2-3 times a week and, in general, I find them to be very typical. The whites are fresh and fruity. Most of the reds are in barrel, but they have very interesting notes of pepper and red fruit.
As I write these lines, the different wines are in the stabilisation phase. The first wines should be bottled in March-April.
